A classic Latvian comfort dish — smoky, savory, and perfect for a cozy meal.

Ingredients (4 servings):

  • LIDO Smoked Pork Neck – 500 g, sliced
  • Sauerkraut – 400 g (preferably unpasteurized for a natural sour taste)
  • Potatoes – 6 medium, peeled and halved
  • Caraway seeds – 1 tsp
  • Bay leaf – 1
  • Onion – 1, finely chopped
  • Butter or oil – 2 tbsp
  • Salt & pepper – to taste
  • Fresh dill – chopped, for garnish

Instructions:

  1. Prepare the potatoes:
    1. Boil potatoes in salted water until soft (about 20 minutes). Drain and set aside.
  2. Cook the sauerkraut:
    1. In a large skillet or pot, melt butter or heat oil. Add chopped onions and sauté until translucent.
    2. Add sauerkraut, caraway seeds, and bay leaf. Stir and simmer for 15–20 minutes on low heat. If it’s too sour, rinse the sauerkraut slightly before cooking or add a pinch of sugar.
  3. Heat the smoked pork neck:
    1. In a separate pan, lightly brown the slices of LIDO Smoked Pork Neck to enhance the flavor. No oil is needed — the fat will render slightly.
  4. Assemble the plate:
    1. Place a generous scoop of sauerkraut, boiled potatoes, and slices of smoked pork neck on each plate.
  5. Garnish & serve:
    1. Sprinkle with fresh dill. Optionally serve with sour cream or horseradish on the side.
